Banana Cinnamon Bread

This is a little different to a normal banana bread, with a crunchy topping (it’s not low fat, but it’s so tasty). I like this spin on a classic.

I found this recipe from a thermomix recipe page…I don’t have a thermomix, I have a kitchenaid though and I’m sure any electric mixer would work just as well. Enjoy 😊

  • 3 x bananas
  • 1 egg
  • 140grms brown sugar
  • 40grms butter
  • 250grm self raising flour
  • 1 tsp baking powder
  • 30grms finely ground coconut
  • 20grms milk

For the cinnamon topping

  • 20grms caster sugar
  • 5grms cinnamon
  1. Heat oven to 180deg and line a loaf tin
  2. In an electric mixer add bananas, egg, butter, and sugar. Mix until combined
  3. Then add flour, baking powder, coconut and milk. Mix until just through
  4. Pour into tin
  5. Then mix cinnamon and sugar and sprikle over top
  6. Cook for 40 mins
