Banana Coconut Muffins

I had 2 overripe bananas sitting on my bench… the easiest thing to make is muffins so here we are. They turned out beautifully and I could easily eat them all… but I won’t 🙄 … really I won’t 😂

  • 1 1/4 cups plain white flour 
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup white sugar
  • 1/4 tsp cinnamon
  • 1/2 cup coconut  (finely desiccated and a little bit of shredded for topping if wanted)
  • 115grm butter melted
  • 1 egg
  • 1 tsp vanilla essence
  • 2 overripe bananas
    1. preheat oven to 190deg and grease a 12 hole muffin tray (or put in cupcake liners)
    2. In a large bowl add all dry ingredients amd mix well
    3. Add wet ingredients in a seperate bowl ans mix 
    4. Pour wet ingredients into dry and mix until combinded
    5. pour into muffins trays (sprinkle with extra coconut if wanted)
    6. Cook for 18-25 mins checking after 18
    7. Let cool in tray then transfer to a cooling rack
