I’m in the final weeks of my pregnancy and on maternity leave… I’m so stuffed! End of pregnancy is tough. I just want to eat and sleep. This soup really hit the spot last night. It can be a simple vegetarian meal or add some bacon if you like. The recipe below is what i used… you’re meant to add celery but my kids wouldn’t eat it anyway so I left it out. I hope you enjoy x
- 2 tbsp olive oil
- 1 onion (brown or red)
- 4 carrots diced
- **2 sticks of celery diced (I didn’t use)
- 1 large potato peeled and diced
- 1 clove garlic crushed
- 1 can kidney beans (washed and drained)
- 400grm diced tomatoes (I used tomatoes from my garden)
- 1 cup frozen peas
- 1 cup pasta
- 4 cups vegetable or beef stock (I used vegie)
- 1 tsp cayenne powder
- 1 tbsp parsley
- **optional 4 x bacon rashers
- Salt and pepper
- In a large pot heat oil and add garlic, onion and bacon if using
- Once soft add in carrots and potato and cook until a little soft. Add spices and stir
- Add in stock and tomatoes and kidney beans
- **you can add pasta in now but i cooked mine seperate then added at the end.
- Bring to boil and let simmer until vegies are soft then add peas until cooked
- Serve with crusty bread and sprinkle with parmesan
