Minestrone Soup

I’m in the final weeks of my pregnancy and on maternity leave… I’m so stuffed! End of pregnancy is tough. I just want to eat and sleep. This soup really hit the spot last night. It can be a simple vegetarian meal or add some bacon if you like. The recipe below is what i used… you’re meant to add celery but my kids wouldn’t eat it anyway so I left it out. I hope you enjoy x

  • 2 tbsp olive oil
  • 1 onion (brown or red)
  • 4 carrots diced
  • **2 sticks of celery diced (I didn’t use)
  • 1 large potato peeled and diced
  • 1 clove garlic crushed
  • 1 can kidney beans (washed and drained)
  • 400grm diced tomatoes (I used tomatoes from my garden)
  • 1 cup frozen peas
  • 1 cup pasta 
  • 4 cups vegetable or beef stock (I used vegie)
  • 1 tsp cayenne powder
  • 1 tbsp parsley
  • **optional 4 x bacon rashers
  • Salt and pepper
  1. In a large pot heat oil and add garlic, onion and bacon if using
  2. Once soft add in carrots and potato and cook until a little soft. Add spices and stir
  3. Add in stock and tomatoes and kidney beans
  4. **you can add pasta in now but i cooked mine seperate then added at the end. 
  5. Bring to boil and let simmer until vegies are soft then add peas until cooked 
  6. Serve with crusty bread and sprinkle with parmesan
