Vanilla Biscuits

The best recipes are the ones that require very little effort for a big result. These biscuits have always worked well for me and you can make heaps in batches.You can add nuts, fruit zest like orange or lemon, smarties etc. Today I made a batch of plain and a batch of coconut.

They work well in lunchboxes and last around 6 days in an airtight container. Right now I have 3 kids staring at me over the security gate of the kitchen waiting for them to cool.

I guarantee whoever eats them will enjoy…but then add sugar and butter to anything and it will taste good really lol


  • 1 cup caster suger
  • 1 tsp vanilla ess
  • 2 cups self raising flour
  • 180grm softened butter
  • 1 egg

    Mix on medium sugar, butter and vanilla in a bowl and mix until smooth. Add egg and blend some more.

    Stir in flour with a spoon.

    Dollop balls however big you like them – mine are around a 20c piece and grow to a decent size.

    **the batter is a fluffy batter so I use a spoon and plop it on, somehow they form nice shaped biscuits lol

    Bake on 180 deg for 6-10 mins
