Miss 8 and the bestie have been at me to make these scrolls. Sooooo finally I got around to them (toddler is being extremely clingy lately).
These scrolls are delicious, cheap, freeze well and are guaranteed to go like hot cakes….well as long as you like vegemite that is.
- 2 cups plain flour
- 1tbsp salt (I use Himalayian rock salt)
- 1 tbsp caster sugar
- 1 tbsp dry yeast
- 1 and a half cups warm water
- 2 tbsp olive oil
- Vegemite to spread
- Grated cheese (as much as you like really)
- (Optional) 1 tbsp Bread improver
Mix dry ingredients together with wooden spoon in a large bowl – not metal. Make a well in the middle and add warm water and oil, mix together.
Once together turn out onto a floured surface and knead for 10 mins. Lightly oil the bowl and once dough is together and in a ball place in bowl cover with a damp tea towel and leave to rise for an hour.
After the hour the dough will be double the size. Punch in the center and knead again for 2 mins. Then take half the dough and roll out flat,
cover with vegemite and cheese. Roll up into a log shape and cut up…like you would a log cake then place onto a tray lined with baking paper. Let rise a little.
Then pop into oven at 220 degrees for around 15 minutes.
