One of my school Mum friends gave me a bag of beautiful figs from her tree to try and omg they are delish! We ate a few but the kids wanted muffins … and … well so did I so I tried to make them as healthy as possible – without skimping on taste. I hope you like them too.
2 Cups Self Raising Flour
1 Cup Shredded Coconut
1 tsp Cinnamon
1/2 Cup Coconut Oil
1 tsp Vanilla
1/4 Cup Maple Syrup
1 Mashed Banana
1/4 Cup Milk
4 Figs chopped up in to small pieces – plus one extra for decoration if you want to
Preheat oven to 180 degrees.
Mix Flour, Cinnamon and Coconut in a bowl. Make a well in the center and add remaining ingredients (except chopped figs) mix all together.
Once mixed add figs and stir gently. Oil muffin trays (I use coconut oil) and fill nearly to the top. Place fig decoration on top if you want and bake for 15-20 mins.
These are fab lunchbox treats and 2 out of my 3 kids love them 🙂
