I’ve been asked for my Lemon Cake and Lemon Biscuit recipes so I thought while Fatman eats his dinner and the other 2 kids run amok (school holdiays…God help me) I’ll quickly post them here.
P.S If you’re on a diet like me…not wise to make for the family cause you end up sampling (to make sure they’re ok and eat half a dozen or half a cake FFS !)
Lemon Biscuits (with icing and chocolate covered lemon rind)
These are sooooo good…except my partner and sister in law both said they look like fannies….perhaps place chocolate on the side of the biscuit. I’ve had winks and nudges from the man who thinks I’ve made him sexy treats?
220grm butter, softened
3/4 cup caster sugar
1 egg yolk
2 tsp lemon juice
1 and 1/4 cup plain flour sifted
Lemon rind from one lemon
Chocolate lemon rind decoration
140grm cooking dark chocolate
30 thin strips of lemon rind
1 tbsp beaten egg white
2 tbsp lemon juice
Cup of icing sugar sifted
To begin cut thin pieces of lemon rind then melt chocolate in heatproof bowl over simmering water and stir until runny. Let cool for a bit. Lay out a sheet of baking paper and dip the strips in chocolate, lay out and leave aside to cool and set.
In a bowl mix sugar with butter and stir. Add egg yolk and lemon juice and blend on a medium speed until smooth. Stir through rind. Roll into a ball and leave in the fridge for half an hour.
Turn oven on 190 deg (fan forced)
Roll out dough between 2 sheets of baking paper to a thin thickness I’d say about 4mm. Stamp out using a round 6cm cookie cutter (or any size you want really this is what I used). Place on baking tray and cook for 9-12 minutes depending on your oven (mine takes 10 minutes).
Transfer to wire rack and let cool.
Mix together icing sugar, egg white and juice and mix until smooth. Ice biscuits and top with chocolate rind. Let set.
150grm butter softened
1 cup caster sugar
2 cups self raising flour
1/3 cup lemon juice
1 lemon rind
1 cup milk
1 1/2 cups icing sugar
2 tbsp lemon juice
Mix butter and sugar together. Once smooth blend in eggs, rind, juice and milk.
Add in flour last. Blend until smooth.
Bake 180 deg for 50 minutes.
Leave to cool on a wire rack.
Once cool mix icing sugar and juice until smooth and cover cake.
Decorate with some lemon and you’re done!
