Apple Cinnamon scrolls 

After my failed Lemon Meringue I decided to make an easier sweet. These scrolls went like hot cakes!

They are a great lunchbox treat and can be frozen and defrosted later.

Basic dough  (see first blog)

2 x small green apples grated

Half tsp cinnamon

Qtr tsp nutmeg

Qtr cup brown sugar

Icing sugar and a small amount of milk.

Method:
Mix grated apple and spices in a bowl add sugar.

Roll out dough onto lightly floured surface. Lay apple mixture on dough and roll into a log.

Cut to desired thickness and lay on a tray.

They’re quite gooey but I swear they bake well and the gooey feel makes them stay moist in the centre.

Cover with a damp teatowel and let rise for 20 minutes.

Bake on 200 deg for 20 minutes or until golden and cooked through.

Mix icing sugar and milk – adding one teaspoon at a time until desired thickness is reached. Drizzle over scrolls.
